Hearty Minestrone Soup
1 lb. Sweet Italian Sausage, browned & drained
1 Tab. Olive Oil
1 Cup Diced Onion
1 Clove Garlic, minced
1 Cup Diced Carrots
1 tsp. Basil
2 small Zucchini, sliced
1 1 lb Tomatoes, drained
6 cans Campbells Beef Bouillon
1 small Cabbage, chopped
1 1 lb can Cannelini Beans
Fresh Ground Black Pepper to taste
Fresh Parsley & Parmesan Cheese
Brown sausage in large frying pan. Drain and put in large soup pan with beef bouillon & tomatoes. Saute in olive oil the onions, carrots, garlic & basil. Add to soup. Cut up cabbage & zucchini and add to soup with fresh ground black pepper. Simmer 2 hours and add cannelini beans. Serve with fresh bread or crackers. Top with fresh parsley & parmesan cheese.
