How do you re-fill your Chef Specialties mill? 

Pepper or Salt Mill: Remove the top knob by turning counterclockwise. Once removed, lift off the top of the mill to access the spice chamber. We recommend filling the chamber only 3/4 full for best performance. Reassemble. 

Shaker: If your shaker features our flow control gate, close the gate. Tip the shaker upside down to access the plug on the bottom. Our plugs unscrew counterclockwise or friction fit depending on the model.Refill the chamber, we recommend only 3/4 full for best performance. Reinsert the plug. 

Combo: Remove the top knob by turning counterclockwise. Once removed, you will be able to lift off the salt chamber to access the pepper chamber. Fill both chambers, we recommend 3/4 full for best performance. Reassemble. 

How do you clean your Chef Specialties mill? 

Wipe clean with a soft damp cloth. Dry thoroughly. Do not use alcohol, strong detergents, abrasives or solvents as they can damage the finish.

Under normal use, our grinding mechanisms are designed to be maintenance free for decades of use. 

Helpful Tips

Spices:  Always use the highest quality peppercorns, table salt, and salt crystals.  Inferior spice may contain impurities that will clog the grinding mechanism.  Store spices in airtight containers away from direct sunlight or heat.  

Filling:  We recommend refilling mills only 3/4 full.  While our products will work properly at full capacity, filling to this level will decrease the amount of torque on the grinding mechanism, making for an easier and more comfortable grind. Extra space in the spice chamber will also allow for the swelling of peppercorns in humid climates. We recommend storing your mills in a dry environment. 

Temperature Extremes and Moisture:  Avoid exposing your mill to extreme heat or extreme cold. Extreme temperatures may damage the product finish and flavor of the spices. Peppercorns and salt crystals do not require refrigeration.Do not immerse your mill or shaker in water. Mills are NOT dishwasher safe.  Water may damage the finish and clog your spice in the chamber.

If Your Mill Becomes Jammed: Occasionally a peppercorn or salt crystal may become jammed in the grinder. Turn the spice mill upside down and shake the spice down to the top. Give the bottom of the mill several light taps.  If your spice does not rattle loosely, your mill may have been overfilled or exposed to moisture. Remove your spice from the mill.

Tip for Changing the Adjustment of Your Mill:  To allow for an easier tightening adjustment to the finest grind possible, turn the unit upside down before tightening to eliminate the opportunity for peppercorns to catch inside the mechanism which could prevent a complete closure.
